Vegetables – Carrots, Potatoes, Beans
Greenpeas – 1/4 kg
Coconut milk – As Required
Turmeric powder, Chili powder, Corinder powder
Curry leaves – As Required
Onion – 1/2 tbsp
Red chili – 1/2 tbsp
Ginger & Garlic – 1/2 tbsp
Salt – To taste


Cut Beans in small pieces. Potatos & carrots into small cubes. Take a bowl and fill in 1/2 ltr of water and half cook Potatoes, Carrots, Beans & Greenpeas. Vegetables don’t get over cooked. Now cut the onions into very small square pieces. Take a pan, pour some oil and add chopped ginger and garlic, stir it for few seconds. Now add the onions. Put the cooked vegetables with water into the pan . Also add salt and very little turmeric powder, chili and corinder powder and allow it to cook. Don’t cook or boil it more because the vegetables are already half cooked. Reduce the flame to sim and add the coconut milk. Cook it on simmer for few seconds and turn off the flame. Vegetable stew is ready.
